Getting to entries on computer
If I've changed iPhone, can't (and don't want to) restore and don't have access to the old iPhone (and therefore can't email entries) is there somewhere on my mac / pc where I can access my entries from a previous sync? I can still restore to a previous sync, so the info is there, but really don't want to because of old jailbreak issues... iphone 100% legal now.

Inappropriate? This is a limitation with the iPhone in general - there is no easy way to pluck files off the device or from a backup. A quick Google did turn up one way, but it will require a bit of effort:

With some work it looks like you can get it directly from the restore files on your computer. However, I have not done this, and I don't think Apple really provides an 'official' way to access or decode these archive files.
Sorry to not be more help, but eliminating the primary and secondary ways to recover data - email export from the app or restoring your entire iPhone from an iPhone backup - makes it very difficult. Perhaps the google link will help?

Inappropriate?Great, I've managed to get the correct files off the backup... now I just need to figure out a way to get them into the new iPhone. I can decode the backup files into app bundles but I can't re-encode app-bundles into backup files... perhaps I'll have to jailbreak the phone to get access to the file system. Of all the reasons to jailbreak I didn't think it'd be so I can get my info into the iphone... lol
I appreciate any and all the help you can give me...
I’m frustrated but amused

Inappropriate?Sorry for not replying sooner. Unfortunately, there is no way other than jailbreaking to get those files back on your iPhone, as far as I know... did you try it? If so, what happened?

Inappropriate?I managed to get another iphone, restored onto it, mailed the entries and as I was about to load them up I ended up changing car care for another application. Honestly car care was getting a bit slow and choppy to work with. Thanks for all the help though. Honestly.
I’m thankful
