If you're using an Exchange or IMAP account, and you don't move your email to the local "On My Computer" folder, then it's all saved on the server. If you're using a POP account, all mail that you don't delete is saved locally.

Additionally, behind the scenes, if you have Spotlight search enabled in Entourage 2008 or Entourage 2004 (11.2 or later only), then Entourage creates a copy of the emails (since Spotlight can't search into databases, like that which Entourage uses to store its data).
