The easiest way could be to test out 1.1 BETA 3 which includes an autoconfig account wizard which will attempt to guess your mail server settings based on your 1and1 email address:

We added some protection to try to make sure this won't happen again but it would be helpful if you could do a lot of starting up / quitting Postbox after you create your profile. Again, we're really sorry you hit this issue.

You cannot remove the topics line. But the content-transfer-encoding issue sounds like a leftover from enigmail if you ever used that add-on.
in about:config type content-transfer
and delete the mailnews. pref that should show up in that list (mailnews.customHeaders or mailnews.customDBHeaders)

you can check it by going to: Tools / Account Settings / server settings
if the gmail server name has imap in the name you should be good to go.
